Well, I didn't get any pictures of the hike due to the rain, so I decided today's post will be mostly about the food. Overall the food is good and the chef does a great job. Every day there are three meals, two optional snacks, and desert after dinner. The optional snacks are almonds or a hard boiled egg. They are optional because some people need the extra calories and others don't.
The food that is served is around 1200 calories per day. There is a salad bar for lunch and dinner, and when the snacks are counted, I am eating about 1500 calories per day. If you're like me, the immediate question that comes to mind is will I be full on 1500 calories per day. The answer is yes, which surprised me after my first couple of days.
The food consists of natural ingredients including whole grains for carbs, organic vegetables, and lean protein sources like chicken and fish. There aren't any processed foods, high fructose corn syrup, sugar, alcohol, caffeine, red meat, or dairy. The nutritionist said that as the body gets older, we have less of the enzyme that processes lactose, and since lots of the guests are older, they just don't serve dairy.
So let's take a look at the menu for today.
Looking at breakfast, you might be wondering how the sausage and egg sandwich can be 266 calories. The answer is turkey sausage. To be honest, it wasn't that great this morning. As I mentioned above, they don't serve dairy here, so all of the cheese is soy cheese. Here's a picture of the sausage sandwich.
For lunch I really didn't care for the Greek pita, so substitutions are allowed. We can select either the boca burger, hummus, or tuna fish. I chose the hummus with a whole wheat pita, however I forgot to take a picture.
Salmon for dinner is always great in my opinion. The lighting of the dining room isn't the best for pictures, so they look a little weird. Here's the salmon dinner.
I now realize that I didn't get a picture of the desert, which was grilled pineapple with a sauce made of raspberries, chocolate, and cinnamon.
Closing thought for the day: The weather was miserable today, the hike was miserable as a result. It was cold during pool class, and I gave it my all in kickboxing and mountain classes. At the end of the day, I enjoyed every bite of the salmon and pineapple, which put me in a good mood.
